I have these tiny black sugar ants that I occasionally see scurrying around on the seats and on the lower dashboard. They're not dangerous. I cleaned out the car thoroughly, but I'm still seeing them. I have a feeling there's some dried up spilled sugary drink somewhere that I can't trace. Any type of bait system that works out there?

I have gotten good results using Terro for household ants.
Terro works great, but I've found that mixing it in with a drop of real maple syrup makes it disappear even faster.
The best part of this stuff is that it is taken back to the queen (s), and kills the entire nest. They just dehydrate from the borax in the insecticide.
I've heard that finely ground baking soda will do the same thing, but never tried it. The baking soda/syrup mixture "might" work.

I've even mixed it with the liquid from a can of corn. They like starchy foods too.

Ants can't survive more than a few days without a source of water. If they are indeed living in your car longer than that then there must be something wet in there too. Also move your car every day and park in a different spot if possible to disrupt the trail that outdoor ants may have established.

With all of the storms blowing through they've had plenty to drink. 😂

I sometimes have a pest as a passenger. When they exit the car at a pit stop and go inside the store, I just leave any way I can.

Sort of like Jack Nicholson abandoning his annoying girl friend (Karen Black) at a gas station at the conclusion of "Five Easy Pieces.

If you parked under a tree, they can get in through the cowl or HVAC vent. Happened to us and we had kids and sticky stuff in all of the places. Washed and cleaned it out well, and just kept it in the sun for a few days.
