Anyone know where the gibberish comes from and why it's there?

Okay, we all get spam. I must get a Viagra ad everyday. Each and every one of them has something like this in the body.

Does this defeat some type of spam filter?
 
Okay, I'll go with that, but why gibberish? Legit communications get through spam filters too ..and why would anyone buy anything from an email that has this sorta crap in it anyway

I think of it this way:

THe spammers have to come up with something to get through as many spam filters as possible, so they use jibberish.

As far as buying anything from these goofs, 99.9% of people who receive their e-mails delete them & never think twice about them. BUT, if the spammer gets his e-mail to 5 million people, & just .1% of them respond & buy his $29.95 product, then that spammer rakes in $149,750 in sales.
 
A lot of spam filters focus in on words or word combinations common to unsolicited e-mail, each word having a "spam probability" assigned to it. An overall spam probability for the mesage is then calculated. If that probability exceeds a preset limit, the message gets filtered. To get around this, the spammers offset the high-spam-probability words with a bunch of low-probability words. That's what you're seeing.
