The temperture of freon is related to the pressure, if your system is under serviced the low side pressure can drop below freezing and the evap coil will freeze. Ideally the low side pressure will be just above freezing. R22 at 57.5 psi equals 32 degrees F. 60 psi on the low side is a good round number to shoot for when servicing.
