Why do we disconnect the negative terminal?

I'll add that when you do disconnect the negative, don't trust the colors of the battery cables. Went to replace the starter on a friend's car, not realizing that some nimrod changed the battery cable, and thoughtfully used a black one for the positive. Thankfully, I did not spot weld my wrench when I bumped the frame, but the big spark got my attention.
Another pet peeve of mine is non color coded battery cables. I've seen them all black from the factory. I keep red paint around just for this occasion.
At least 1/2 hour. But often longer since I go off and do something else and get back around to it.
