It's a private business after all. They already have a lot of security cameras inside anyways.
As to why they wear one instead of just sitting there above the door. I think it is to make sure you know you are dealing with someone who has evidence of your behavior if you get offensive. I don't mind it since I don't argue with greeters. If I have any problem I ask for the managers instead.
