I am looking to get a different vehicle soon. The things I want in a vehicle are the following: 4X4 a must, enough power to climb mountains, off roading capability, enough room for me and up to 3 dogs and luggage for me and the ability to modify them. I might possibly be doing a lot of traveling in this vehicle. So the vehicles I have thought about are: a used Jeep Cherokee, a used 2003 to 2005 jeep grand Cherokee, a Toyota Tacoma, a new Jeep Rubicon. So out of those what would you pick and why? TIA.

If you're really looking for 4x4 capability and upgrade options, the Jeep Wrangler is a no-brainer. Tons of 4x4 aftermarket for this already very capable vehicle.
Out of all the Jeeps, I'm partial to the Grand Cherokees myself (the older ones anyway, the new ones don't look quite as good, IMO), but it can't hold a candle to the Wrangler in terms of off road ability.

What about a used Land Cruiser?

I would get a previous generation Grand Cherokee (1999-2004) with the 4.0L I6. The I6 has plenty of power, is easy to work on, and will last a very long time. The solid axles front and rear are a plus, though I would not go much larger than say 33" tires with the Dana 30 front axle (upgrades to the axle, or replacing it with a stonger model will allow you to use larger tires). Cherokees and Wrangers are good too, but since you will be doing a fair amount of traveling, the Grand Cherokee would work best.
I would avoid the 1999 and 2000 Grand Cherokees, they have a bad track record for all kinds of reliability problems; most of which were resolved by 2001.
I've always been a fan of Nissan X-terra's.
Out of those, I'd pick the Tacoma. Love those trucks and everyone I know that has one, loves it. I'm also partial to the Nissan Frontier.
Based on your needs the Subaru Forester sounds like the suv you need. Out of the SUV's you mentioned... My vote goes for the Jeep.
Everything you are naming is too small for what you'll be carrying. Get a Suburban or Yukon XL 4x4.
Of those, I'd take the Jeep Cherokee; more space than the Rubicon and available with a 5 speed. A truck might be the best option for a bunch of larger dogs though. A topper would give you a lot of covered storage space.
