Bit the bullet and took it into a mechanic. Its been a long time since I have visited one but sometimes you need to realize that you don't know as much as you think.
Bought a new coolant overflow tank from the dealership and it was still overheating. At this point radiator cap & thermostat had both been changed and I was stumped. No signs of a bad head gasket either.
Turns out the radiator was clogged and needed a replacement. Let my lesson be a warning to routinely change your coolant. I believe the last owner did not change it for around 6 years.
