Voltage during driving has virtually nothing to do with battery capacity and life remaining - it's a function of the alternator performance.

With active battery management on modern vehicles like yours, it's hard to determine appropriate running voltage as the system will stop charging the battery and let it rest on longer drives.

I'd use a battery tester if I was concerned about battery life. Ideally using a carbon pile battery tester as the cheap ones used by auto parts stores can be less than reliable. If it cranks up fine, I'd keep running it without worries.
 
My Dad and I a few months before he passed away last year at 89. I'm glad that I was able to take him for a ride in my '63 C10 which is similar to the one he had back in the day.
