The synthetic 5W or 10W30 oils will be good.
But if you really want no shearing and you are working the engine/oil very hard, I think you want an Heavy Duty Engine Oil (HDEO) designed for gas or diesel.
Two that come to mind are Rotella 10W30 or AMSOIL ACD
While both are very good, the AMSOIL is what I would choose in your situation for the higher ZDDP levels (Anti-wear) for the demands of hard towing. In addition ACD has no Viscosity Improvers to shear down, so it will stay in grade (30 wt) while any others with VII's will eventually lose some viscosity due to VI shearing.
AMSOIL ACD is not necessarily the best for every day needs, but for your criteria, I think it is the best choice.
What about running Shell Rotella T Synthetic 5w40 diesel oil? or is the 40wt not a good idea? Just wondering as the Shell Rotella Synthetic 5-40 is quite common around here.
