Made a chicken and leek soup last night, it was alright

Winter Melon soup with hot peppers. The Winter Melon absorbs the flavor in the soup and gives a soothing mellow feeling a relaxing feeling.

You can add Winter Melon to most Asian or vegetable soup, it gives an extra kick.

French onion when the onions are from our own ground.
With a nice glass of Cognac.
 
I enjoy soup this time of year. The colder outside the better the soup tastes. I remember my grandma would make a tasty Turtle soup. Actually, I think it was mock turtle soup and ground beef was used instead of turtle. At least that's what she told us.

Absolutely - agree 110%. Not sure about the cognac though... Never had any.
 
Winter Melon is the single guys easy meal. Can tuna, chopped WM, slice round onion with soy sauce cooked over medium heat until WM is soft. Add no water. Pour that over hot rice.

Or you can have thin sliced fish filet such as red fish slow boil than add WM, slice round onion, chopped green onions, sea salt for taste. Add very little water for the fish to soften. Pour over hot rice.

Easy examples....WM is a cheap healthy single guys easy meal.

For soups I like mustard cabbage(tasty good soup flavor) slice ginger and chop garlic, tied Kombu, sea salt for taste.
If adding chicken need to boil chicken first or any other type of meat like pork or shrimp what have you. Don't over power ingredients. For tied Kombu one each per 1 cup that should be one serving.

For an easy WM soup you can boil chicken first, add chop carrots, chop celery and sea salt for taste and hot pepper(optional).

Really for most Asian soups(not miso soup) adding WM gives an extra kick. Some add just a little WM and boil it until it becomes water to thicken the base.

I grow the Chinese giant WM which has a sweeter flavor.

WM soups gives a relaxing soothing feeling.

There is no soup I don't like. Pho is pretty good but I like Chinese egg noodle soup better. The best Chinese egg noodle soup in So Cal is Sam Woo restaurant in Irvine, it's usually packed during lunch and dinner.

When I like to eat Pho I have to go to Little Saigon in Westminster where all the good Pho restaurants are located.
 
I know it's a bit pedestrian but... tomato soup. Load it up with crackers, cheese and a little celery seed, cold glass of milk on the side. Now that's comfort food.

My wife makes a good homemade chicken noodle soup. Big chunks of chicken, large noodles, some vegetables, it's almost like a stew, but it's still soup. I'll top that with some fresh ground pepper. It's a good meal.

I am also a huge fan of Tomato soup and surprised it was not mentioned until now!

I also love cream of anything soups. Celery, Broccoli, etc.
 
My favorite is the now unobtainable Beer Cheese soup from the restaurant that I used to manage. A big bowl of it with a slice of the IPA/Stout grain beer bread. We sold so much of that stuff, it was a legend in Green Bay. Yes, it was a micro brewery.

Several years later, the Executive Chef decides to replace it with chicken chili. I'll never understand why, as the sous chef that made the chili no loger worked there.

The only thing that could salvage that scenario is if they put a lot of beer in the chicken chili. All the chicken chili I've had is pretty bland and boring. But the Beer Cheese soup sounds like an all time favorite especially with some good beer. A meal in itself and I'd skip desert. Great comfort food also.
 
I only make a few soup type dishes, but I really enjoy all the ones I do.

Portobello mushroom chilli.
Toscana soup.
French onion soup.
Pot-o-lentils.
