My jeep only sees maybe 3k miles a year. I change it every 6 months though because it is nothing but short trips and offroad high revving fun

I would wait, isn't that factory oci 5000 miles? Regardless of the mileage in the manual never go by time out of warranty unless you see mayonnaise in the hole
"They say 3k miles" is out of fashion. Now " they" say 5K to a year.
If you use "Super High Mileage" oil, you need to drive some super high miles before you change it; it says that on the label.

You're reading it wrong. It's not "Mobil: Super High Mileage". It's "Mobil Super: High Mileage". "Mobil Super" is their cheap conventional.

I would change every six months or by mileage, whatever is sooner.

The problem with a "synthetic blend" is they don't say how much is conv and how much is synth. 50/50 would be a blend, but so is 99% conv/1% synth. You don't really know how much of either is in the "blend" because they won't tell you... probably because it's never consistent.
Unless one is running a brand that has no problem telling you what the actual blend is. Most brands don't, but some very reputable brands do provide that info in their data sheets. Mine does.
I view this as similar to agriculture equipment. Most of that line of stuff is changed on a an annual basis and sits for several months between usage, many more than 5-6 months or longer between use. And the majority of them use conventional based oils. Not sure why one with a auto that doesn't run for several months would do anything different. But then, we are only talking about a few quarts of oil. Not like anyone is having to take out a second mortgage to do an oil change on a car or pickup. if we were talking about multiple gallons of oil for an oil change, the arguments about going longer would carry more weight. Change it if it feels right, don't change it if it feels right. Whatever helps one to sleep well at night. Most people blow more money on noe single dining out experience than it costs for an oil change.
