working on a 150 diesel massey tractor. the replacement valves have dished or concave heads, the originals had flat tops. thick I will be able to tell the difference?

They'll maybe get a little hotter. Hopefully the replacement valves are made of more heat-resistant material, or at least faced with good material.
The compression may go down a tad... and maybe even more so if you're removing carbon in the cylinder at the same time.
Will you notice?... probably not.
