Just about to start doing the maintenance on my wife's 07 Acura MDX instead of taking it to the dealer. In reading the manual, Honda seems to indicate that using any non-Honda fluid other than oil (P/S, coolant, ATF, brake, etc) that it will corrode your vehicle. What's up with that?

I'll help a Honda around here.......
Use their P/S for certain.
I've used both their ATF and Amsoil ATF with identical results in shift quality and hopefully majorly long life as well with Amsoil's product. I have more than 200k on Amsoil in two transmissions without issue.
As for the rest:
Use a "global" or dealer coolant.
Use VTM-4 dealer fluid in the rear end if you have 4WD.
Other than that, other good quality fluids will be just fine.

sometimes OE fluid perform better but sometimes aftermarket perform just as good. my guess...that Honda does not want owners to mess around the AT, maybe they just want to minimize the chance of lub related AT failure after the 1 generation 5AT.
for 2007 MDX, the AT, and rear differentials spec ATF-Z1. the transfer case call for either 75w-90 or 80w-90 GL4/5 gear oil, generic is fine. stick with Honda on power steering fluid and coolant.
