Pizza Dough

My problem is I am spastic. I realize I want pizza at 5:30. Too late to proof the dough overnight. It’s just my wife and me so sometimes we don’t even have our pants on to fly by.
 
Trying to find premade pizza dough for use in an Ooni. Got some “fresh”dough balls in bags at Food Lion last night but just couldn’t stretch the balls out.
Trader Joe's sells a refrigerated bag for $2, I think. Two varieties. You can freeze that for later use
I’ve been making the dough for the past year but it’s too messy and time consuming to proof it.
Not sure how it's so time-consuming. It's mostly just sitting there, rising. No need to watch. Just plan ahead.
Any suggestions?
Make a large batch, divide into portions, and freeze. You'll always have dough ready to go.

I gave up on the fresh dough thing after about 3-4 tries. Started searching for the best pre-made crusts.
There are a few decent ones out there. The Molinaro's organic at Costco tops the list. Four crusts, four packs of sauce for about $10. The sauce is just OK but the crusts are very good. I mix the sauce packets to make my own with crushed tomatoes, fresh basil and spices. Second best are Golden Home....3 for $6.
 
I like the Atkins Low Carb frozen pizza... Its not too bad and is low card..Also the Quest frozen pizza is good to but has a little more carbs in them..Following me from a kis I still like the Chef boy are dee pizza you buy in a box and make it yourself...
 
Ever try these? Already cooked crust, not bad actually.
Just add your toppings and bake.

Another option would be to make your own dough, then cook and freeze the crust without toppings. Pop one together later without much planning ahead.
 
I appreciate all your responses. If I were gonna through a pizza in the oven at 350 degrees, many of your suggestions would be great. But cooking it in a 900 degree environment for 60 seconds may limit my possibilities.

I am hoping a fellow Ooni user would have some insight. Apparently, the water composition of the dough is extremely important.

We used these in the regular oven, and they're great.
However in a pellet fired pizza oven - forgettaboutit. Need an uncooked dough, they are burnt faster that the ingredients bake.
I use my Weber Genesis II with the sear burner and two regular burners along with this thing which has a pizza stone inside. I get temps on the stone of close to 800. It's properly pronounced Bo-yuhr-di with emphasis on the middle syllable. His Italian name was Boiardi and he surrendered to the mispronunciations of the Americans by changing the spelling. However, he kept pronouncing his name the proper Italian way. There are historical audio recordings. It's also interesting to note that he ran a restaurant and got into canned food manufacturing only because of The Depression. His original recipe for red sauce with beef is simple and delicious. I make it often.
