Your take on the health of the food at Buc-ee's is different from what I observed. To me, it seemed not that much different than any other fast food joint. Just a slightly different menu. In fact, I personally was overwhelmed on what appeared as anything but healthy, in what they were serving, and shocked at the masses gathered all around, just to get their serving of fast food.
I couldn't out of there fast enough. My wife however, was a little in love with the place, and is looking forward to her next visit to one of the joints.
But you have to take into account it's still gas station food; healthy food choices are going to be a low priority. It does offer a one-stop alternative for gassing up, clean restrooms, and food that's not the typical hot dogs left out for hours or attached fast food joint.
They do have decent bakery items and a much wider range of the typical gas station packages foods.
The only one I've been to, down in Missouri, do offer healthier choices like packaged salads, nuts/cheese, etc but if I'm trying to find food at a gas station during a road trip, it's most likely not going to be healthy regardless. I'd take a stop at a grocer closer to the highway.
