Girlfriend and I will be moving from the rental house we are currently living in and we're looking at other rental homes.

Scenario I'm looking at is, if we cannot find a house to rent before our lease is up, what are a person's options for temporary housing until we find an appropriate place

Living with family or friends? I don't know of any other way besides Hotel/Motel that won't entail a minimum 1 year lease. I'm sure different regions of the US are in fact different.
Month to Month seems reckless from a property/unit owner standpoint.

Used motorhome or travel trailer.

Buy a cheap one ( ~ $2000 - $3000 ) that's depreciated all the way - - spiff it up a little,
and you'll sell it for a profit after having lived in it for whatever period of time you needed it for.

I have never lost money on one.

Lower your standards or end up becoming a tenancy at sufferance.

As mentioned earlier, either friends/family or you can do a short term AirB&B. But short term is always more expensive than a regular lease unless you're in a homeless shelter.

Van, down by the river.

Realistically the options are you just settle for a cheap place below your standards/income and store belongings that won't fit in a storage facility till you find a place that's Just Right.

A bed and breakfast type place might cut you a deal on a month lease. Also as repulsive as it sounds if it was only for a month, an inexpensive but clean hotel can be utilized. I once cut a deal on a six month lease on a house that had a development permit and was scheduled to be ripped down later that year. I was fixing up my existing house to sell it and already owned a house in the country.

My Wife and I stayed in a local motel at a weekly rate for a few weeks when we were moving into our current home. Our lease was up and escrow hadn't closed yet. It wasn't fun but we made the best of it.

Actually, in my short landlord experience, I heard about it being favored by experienced landlords because of trouble/liability factor:
-if a renter does not want to stay the whole year, you cannot really force them to stay (good luck recovering lost rent+fees if they move over night to a different county/country/state)
-if a renter is not desirable anymore for a whole year, you can part ways easy and legally in just 1-2 months.

Usually is used as month to month but heard about 20+ years month-to-month renters cases.

OP,
I would recommend Extended stay for 1-2 months.
for 6 months, there are houses outhere, you just need to find them.

If you're going to mention the van down by the river, at least link the skit.

Month-to-month is usually a privilege granted to good tenants by an landlord who is more interested in keeping them as tenants than locking them into a lease.

Your best bet is a sublet. You might be able to get discounted rent.

I've always rented housesmonth to month, if there is a 1 year lease I would argue for month to month.

LOL so true....I do know a couple guys that lived in a State Park for about a year and a half to save money. $8/day for the camp site but they had to move every 8 days due to park rules.

Look for extended stay hotels.

Regular hotels will be expensive, but sometimes they have special rates if you book for a few weeks or a month that's really good.
