NLGI grade and temperature

I can't find a lot about grease grade vs minimum temperature.

I.E. how cold is too cold for NLGI 3 in wheel bearings.

My travel trailer with dexter axles has M1 NLGI 2 grease in it.

Since i only tow in warm to hot weather, would a NLGI 3 grease be better? Coldest i've towed is around 32f.
 
No, you would have to look at the base oil properties for that. NLGI is more about how the grease stays in place. wouldn't want it too high or you could starve the bearing from oil.

How hot do the bearings get, how slow do you drive (slower speed means higher viscosity needed), what size are the bearings and what type are they? Roller bearings need higher oil viscosity than ball bearing for example
