How much oil does the car take? Id use the Pennzoil High Mileage mixed with Edge first, gets an open bottle off of your shelf.
I'd run it with that Boss Filter.
If I were you, at 5k OCI, id run both filters mentioned twice..

The QS & Pennzoil High Mileage & QS are probably the oldest.
Was thinking the Defy next change (SOON W/ Boss) then Castrol Titanium 10w30 & 0w-20 mix for the winter, being they're full syn

Older and thicker oil for the summer. Use oldest filter first. Save the Ow for winter. Extend the OCI to 7,000 miles of more.

I'd also factor in the add packs. Your Pennzoil / Quaker State oils are all high calcium, low magnesium and low sodium. The valvoline is high sodium. The Mobil 1 is low calcium, high mag. The Castrol could be either very high mag/low calc (older mix) or high calcium, low mag (the new version). I'd rather stick with one add pack if it's working. Shuffling back and forth to the 3 different add pack types doesn't make sense to me. Stick with each type until it's gone....factoring in age and ambient temp the best you can.

Since your Pennzoil / Quaker State are the oldest...it sets up fine. But that would also mean going to straight High Mileage oils. If your car is currently not using up oil, I'd probably not go with those right yet. I'd have used up a little of the Penn/Quaker State High Mileage quarts on those last 2 PP oil changes.

My Camry had leaky seals as well. The 5S could care less what oil it has in it. But, I have noticed thicker oils on winter do tend to make a difference in start up and oil pumping, but that is expected. Definately run the Mobil 1 10w30 for summer. I have always been interested in running 0w20 in a 5S, but I have always been advised and read to never do this. So I would not recommend it to you! On the topic of maintaining your 2000, make sure your timing belt is done and it will be like new.

I did use some PennHigh Mileage (as top off) when it was leaking from the oil pump seal

The timing belt was done when the leak from the oil pump was taken care of. I wasn't gonna run straight 0w-20, was thinking of 2.5 10w30 & 1 0w-20 mix of the Castrol Titanium
