My oil stash currently has Castrol Edge HM 0W-20, Castrol Edge 0W-20 and Mobil 1 Extended Performance Full Synthetic 0W-20.

The 2011 Camry has 229k miles and has been running Castrol Edge for years. The 2017 Camry has 100k miles and gets driven a lot. I'm leaning towards the Extended Performance in the 2017 and Castrol HM in the 2011. Does anyone suggest a different combo for these changes?

What exactly are your intervals for both and do you have any consumption on either? i'd start there.

On the 2017 no oil consumption on a 10k interval. Mostly highway miles.

The 2011 was on a 10k interval until recently. Now it is on a 5k interval. About 1/2 quart every 5k miles.

I think your plan isfine, but always ask the question about whether you have some rationale, some problem you are chasing down, in using HM oil. I've driven cars far beyond 200k and never used it on them.

I'd use a 30 grade euro oil to be honest since both are not direct injected and it would help. I'd probably use Castrol edge euro 5w-30. I wouldn't be afraid to resume 10k intervals with euro 5w-30 on the 2011 either and also use it on the 2017. The oil can easily handle it in that engine and you seem to put miles on them pretty quickly. Just keep checking the level for any progression.
