need oil recommendation for a 2008 corvette

Since you don't track the car the Mobil 1 5w30 or Mobil 1 Extended Performance 5w30 are excellent choices and align with the factory recommendations.

If you were to track it, I would suggest perhaps looking at what GM uses in their own track program Corvette's, which is Mobil 1 0w-40.
 
Having owned a 2005, and 2008 C6 and a 2008 Z06, I would run either the Amsoil signature series oil or the Mobil 1 0W-40 oil. Either one should be great for your usage.

Redline looks good on paper since its a different kind of synthetic oil that about every other brand (POE). However, it always fails to distinguish itself on User Oil Analyses, time after time just mediocre results.

Mobil 1 5w30 or 5w30 EP is fine for your application. GM4718-approved oil or dexos1 is what you want to look for on the label. There are many good quality synthetics that will work fine for your pattern of usage.
 
I'd go with Edge. I can't remember if it was Patman,or another Corvette guy here that went from M1 to Edge on his Corvette and liked it much better,driving wise and UOA wise.

Mobil 1 0w-40 would not be too thick for you in that climate, in summer, especially if you drive distances, and get stuck in that infamous metroplex stop and go crawl.
