I downloaded a free version of Adobe Acrobat a couple of months ago and ever since then, email attachments etc open up in Acrobat even though I do not want it to. How do I disable Acrobat from being the default option for opening up attachments?

You doing really need acrobat reader anymore. Web browsers can open them natively. I would uninstall it.
Windows? What app do you want to open the files?
Go to Settings/apps/default apps, click on Adobe, click on PDF extension and then select the app you want.

Windows 11. Not sure what app was opening the files previously but it was preferable to Acrobat.
Usually MS Edge is default one.
That's a problem because if you want to turn off adobe you have to pick another one.
Edge browser is always an option. It handles PDFs natively.
