I disagree. Good sauces should complement the flavors of the what you're dipping. When it overpowers the roll, it's more of a sign that the spring roll isn't that good.

Also, the sauce is optional. You don't have to dip it. If it was mandatory, it would have been part of the roll itself
 
Been years for me but just yesterday my neighbor brought me a full platter load of Lumpia as she had made up a large batch. Some time ago she had a co-worker from the Phillipine's teach her how to make em - well she did good as they were very good. It was such a nice surprise of her to knock on the door with a load when I was about to tell my wife "I'm hungry". Good timing and good eating. Sure hit the spot well. Good sauce to. Really made my evening.
My wife didn't cook dinner after that. I was stuffed.
Only down side, its gone and now I want more very soon.
 
I like eating gyoza with ground pork, wild Mexican shrimp, green onions, chives, ginger, garlic, Chinese cabbage and Chinese parsley. The green onions, chives, ginger, Thai peppers and Chinese parsley are home grown(organic).

Sauce - soy sauce, rice vinegar and Thai peppers.

Ha-Ha, no egg.

She chops pork for a long time.... adds these Asian clear noodles, thin strips of carrots & several other ingredients. I pick apart the Lumpia egg roll wraps from the Phillipines as they are "the best" wrap, puts in the mixture, rolls them up & deep fries them.

Her Department ate all 200 of them; other people brought in stuff as well, but there were the hit. Everyone tells us to open a Restaurant, but that's a total different lifestyle.She will sell them upon request.

She just brought in 20 bags of Mung Bean Sprouts to sell for $1 a pint bag to people at work & does this every week.





"Egg" roll is a lost in translation name that should have been "Spring" roll. Just like Hush Puppies have no dog meat in it, "egg" roll has no egg at all.

Basically it is a thin tortilla wrap with shredded vegetable and meat. The tortilla are made from ingredient (wheat flour, rice flour) depending on the location and style. Some of them are also eaten cold and not fried.

Fish sauce with fried egg roll is a great Vietnamese dish. The fish sauce if made right isn't stinky at all but sweet and sour with a hint of seafood taste similar to Worcestershire sauce.
 
Fish sauce (Nuoc Mam) is just one of the primary ingredients in Nuoc Cham....

with the base ingredients of Fish Sauce, water, vinegar, lime juice & sugar.

Some add garlic & crushed chili sauce as well.
 
Wife's making egg rolls tonight.

Ingredients: 3 steamed [censored], 2 lbs shrimp, 2 lbs grounded pork and misc. The total is about 45-50 egg rolls at $60, it is so good.
