Most of these calculators attempt to model nonlinear behavior with two points. Dumb, dumb, dumb. Ive never seen anyone validate the maths.

Dont make any assumptions.

But it is possible that at some temperatures, the 0w- will be more viscous than a 5w-.

In fact, it's more than possible. It's quite likely. Look at GC or 0w30 HDEOs. They may have a cold cranking advantage, but their HTHS will be significantly higher than that of a normal SN/GF-5 5w30.
