Mixing 0w30 with full synthetic safe?

What is a "VW guy" ? The service writer? Time to talk to the Service Manager and lay out the facts. Writers are there to deflect at most stores.

Primary issue I see is an old car with likely high mileage. Did you buy it there and happen to get a "million mile" drivetrain service contract?
If not follow @Hermann above and get this oil change done at a different shop.

How does that help
It helps by getting rid of it while it still runs and drives fine so it can fetch a higher trade in value because at that consumption it's not long for this world. Keep trying to run it and keep turning that oil light on and you'll end up with some not so pretty holes in your block.

Wait, can you give us some exact details about what happened? If oil light came on after oil service, you stop, and tow vehicle to same place where oil has been changed.
Place that uses 10W30 in VW, should be avoided like a plague. Actually, don’t drive on the streets next to that dealership.

You can, but why would you want to mix an approved (I assume) oil with some non-approved oil?
I’m trying to fix an oil consumption problem so I’m just looking for an oil that may be better than what VW gives me. Not sure if it’s a turbo seal or ring problem.

Sadly you won't fix anything with swapping oils, it never ever isn't any repair.

Unfortunately, your answer doesn't lie with the oil. Nor would i go back to that dealership [that changed your oil with 10w30]. I would search for a proper independent shop specializing in euro vehicles.
