I can actually get this where I live, but I have to go to a specialty shop and it's pricey (for what it is). I've found that Crema Mexicana is fairly easy to get...but I've got to add sour cream to it to get the right consistency and it never quite turns out.

Any ideas or recommendations? BTW: I'm using this for a Flammkuchen...

You need a little culture...1 tablespoon of buttermilk or sour cream and 1 tablespoon plain yogurt..(needs to have a mixed active bacterial culture) to 1 cup of heavy cream... mix, cover lightly and let stand. 4-8 hours or so.

Lightly Sweetened Creme Fraiche

Ingredients
1/2 cup sour cream (4 ounces)
1/2 cup heavy cream (4 ounces)
1/8 teaspoon vanilla extract
1/8 teaspoon table salt
2 teaspoons sugar

Instructions

Whisk sour cream and heavy cream in bowl; set aside at room temperature until thickened to the consistency of yogurt, about 1 1/2 hours. Just before serving, stir in vanilla, salt, and sugar.
