I have an original 1965 Chevelle with 26,000 miles. Should I just use a conventional motor oil?

WalMart has it , 10w-30 GTX Classic Conventional listed but I would bet you would have to order it. Lately there have been things that show up that they have but we can only get thru online orders. What is strange is how they don't have it and then it shows up at the store for pick up so fast like in 1-2 days at most.
Walmart has regular Castrol GTX in 10W-30, API SP, which is not what his Chevelle needs.

There is a Classic GTX with retro label that has higher zddp. It has only been available in 20W-50 to my knowledge.

That’s quite a car, though I’m sorry to hear that you lost your dad.

I’d run an HDEO and call it a day. Can’t go wrong with any, but I’d lean towards Delo since the pumping characteristics are really good.
 
Ooooh! I like it! A real sleeper. A 327 (my favorite small block Chevy), 4 on the floor, on a post coupe with dog dish hubcaps.
I'd run a 10W-30 or 5W-40 diesel/passenger car rated oil.
 
Assuming it won’t be your daily driver, Valvoline Vr1 conventional will fit the bill nicely! Please tell me it’s a Z16! Pics please!

VR1 10W-30 would be great, even if it’s a daily driver. Also Penn Grade 1 or Driven. That’s a 327 in the pic. What HP? 250 or 300?
 
Quick mention: you might want to look at the transmission and rear axle lube. If they've never been changed, you might want to consider doing that. At least check the levels. The engine oil ain't the only thing to consider.
