how much water is needed in a well?

Sorry Chris when you mentioned tank I thought you were referring to a cistern. A cistern would not be a bad idea with your well for additional capacity if you garden, large lawn, livestock etc. But seriously if you have a collapse you need to see about getting it re-drilled (hopefully deeper) and LINED properly.
 
Around here it's common to have the well pump fill a large non-pressurized tank (cistern) then a boost pump and pressure tank supplies the house. With that setup the well can be very slow but you always have plenty of supply to the house.
