I had it changed late December and couple weeks ago or so I noticed it had turned a gray color.. Pedal and shifting works great but whats the deal here. Maybe the hose is getting old?

Grey can be due to moisture absorption, check on the leakage on the cap, if it is tight and no leak anywhere, perhaps your hose is deteriorating like you suspect.

I turned an oil opaque gray when there was some factory fill leftover in motorcycle fork leg and filled up with D2 ATF oil. Flushed them a couple of time and then D2 stayed clear. Maybe the factory clutch fill wasn't the same fluid you poured in.

No it was not the same brand. . I had Honda fluid in there all along but put Valvoline dot3/4 recently .. Maybe Ill flush it again? It is opaque Gray now.

Fluid is cheap. Empty the reservoir, fill it with new fluid and bleed through till it comes out clear and even more. Check color in a week

+1 I would do this. If the fluid changes I would suspect either water was introduced or perhaps there are extra metal shavings that is causing this issue. Either way a flush will help/help investigate the issue

IIRC this was a problem on many Honda/Acura products in teh late 90's and early 00's with MT.

If fact, I had a friend with an Integra GSR (mind cond. btw) that also had this issue. We tried flushing the system several times, but as I recall he finally gave up and drove the car regardless of the fluid color.
