Also, I always wonder about dummy guages. The only time they seem to work is when something is VERY wrong.

I wouldn't worry about the mechanical guage, its probably more accurate than the Dummy guage. Just after a good expressway run is when the oil will be at its thinnest, and at idle is when there will be the least amount pumped.

Not sure about the cleaning part but I agree that the oil will be it's hottest and showing slightly less pressure once your foot is off the gas.
I wouldn't worry. If it hits 0 then worry

What does it do driving around town after reaching temp?

The dummy guage has always worked, start engine and guage immediately goes to the center (meaning there is oil pressure) The mechanical guage I installed a few years ago typically reads about 60 to 70 when cold, or when driving around. Then it dips down when at idle hot. I am just wondering if the dummy guage needs about 30 psi in order to work properly. since it is getting below 30 when hot at idle may be why the needle is dancing all over the place (while the mechanical guage holds steady between 25 and 30). I am sure it is fine, just never had this happen before, maybe the oil is flowing too well with the M1 and ultra.

Probably coincidental that the dummy gauge went bonkers. If there was really oil pressure fluctuations going on, you'd see something on the mechanical gauge too.

If it were me, and I lost 10 lbs at idle, I'd switch back to the oil I was using previously. Don't think the filter has anything to do with it
