Food Allergies

I posted this in the Milk topic, but wanted to get some feedback and I'd probably see it here.

So any suggestions or hints on how to replace and/or work around the recent limitations in my DW's diet?

Things may change as oilBabe had an allergy test a bit over two weeks ago and reacted to:

seafood/fish
dairy
soy
nuts
peas and beans
chicken and eggs

Wow, talk about really impacting the diet.

Now we are not sure if she's really allergic to all of that. We are pretty confident of the seafood/fish allergy as we've experienced some severe reactions which has prompted the allergy tests as well as some other factors.

However, finding foods without dairy, eggs and soy has been a real issue.

Hopefully, the reactions to those were sympathetic reactions due to some other allergen such as the seafood.

She is on a 30 day elimination diet to see how things go without those items before they are re-introduced into her diet or she's retested.
 
Seafood, Dairy, nuts (almonds), and soy are all pretty common.
Most of my family has an issue processing grains and has been diagnosed as having Celiac disorder. Once they got off the grains they lost a lot of weight.

I know for certain that Soy is very hard for human beings to break down.
This stuff happens, and learning this can be a good thing.
And just because she is allergic to it doesn't mean you have to be 100% off of it, probably wont kill her, just makes her feel sick.
I haven't had a glass of milk since I was in the 6th grade. The stuff makes me sick. I don't like ice cream as it makes me sick too.
It is better to go without and feel better than to have it and be sick.
 
Hmmm, I'd do some reading on false positive tests for allergies if I got a result like that.
As for dairy allergies, I've talked quite a few people who do fine with goat milk and not cows milk. The major proteins are different between the two. Goat cheese is also a good way to get some dairy into a salad too.
Talk with the doctor of course and maybe try introducing goat dairy first then cow to see if she reacts to them differently.

Once you get used to not buying processed food its not that hard, and it simplifies your shopping trip, you mostly avoid the dozen rows in the middle of the store full of stuff that's bad for you...

We have a neighbor with Celiac and we were able to eliminate gluten from our meals when she would come over for BBQ.

The only thing that really made her sick, as far as we could tell was seafood. She would have difficulty breathing, etc.

Chicken, eggs, omelets, etc didn't seem to bother her, so this was a blind-side to say the least.

She can have the grains, just not the eggs or dairy used to assemble most things made with eggs.

My neighbor avoiding gluten was able to make a gluten-free, dairy free chocolate cake using rice flour, tapiocca flour, rice milk, cocoa instead of milk chocolate and a few other things to substitute for eggs, etc.

It tasted pretty good. Not insanely sweet like a traditional US cake, but more like a European dark chocolate cake.

Ice cream is another biggie she really misses, so it's been frozen fruit bars instead of ice cream.

I think that's what the 30 day elimination diet is about. For now, to be safe, remove them for the next 30 days, and then add one thing back and see what happens over the course of a month.

I wondered if some of the other reactions were some sort of "sympathetic" reaction to the real culprit, seafood. But that's not my area of expertise, so we'll go along with the allergist for now.

She got dairy back after doing a dairy challenge and the Dr's office.

Her esophagus has returned to normal, but there were multiple factors. I really doubt she has full blown allergies, save the shellfish since she would react to that. I'm thinking it's more selected food intolerances.

I think chicken/eggs may be the next things she tries to challenge with the allergist.
