DOT 3 Or DOT 4 Brake Fluid

I used to buy Valvoline Synthetic Dot3/Dot4 brake fluid. All my cars have that.
Now I see that Valvoline has made 2 separate fluids, DOT 3 OR DOT 4.
1) Which one should I use? All vehicles are 2004 or older. 98 Expedition, 03 Suburban, 04 Nissan Sentra
2) Can I mix one with the older DOT 3/DOT 4 Fluid?

Sometimes I have very hard time following. DOT3 is so outdated. There's DOT5.1 for like 30 years. Why not even use a horse-drawn carriage?

I always use at least a DOT4. But I live in Utah where there are all kinds of mountain passes, and I always want to have that extra insurance that I won't have to worry about brakes overheating.

Florida has to be the flattest state in the nation. Your cars are all daily driver type. So I would have no problem going with DOT3 in your situation, if you are looking to saver pennies.
