Do Apple product go on sale during the holidays?

Apple Card is good if your buying an Apple product, other then that you would be better off with a Wells Fargo or Citibank 2% cash back card.
You can use Apple Pay with any credit card that you put into it.

Yes but I was pointing out the 24 month interest free installment plan.

I recently upgraded a 2014-ish Mini to a new M1 Mini and missed the number USB ports too. I decided to upgrade the monitor at the same time, so I got a Philips 4k that had a built in USB hub, so I gained all the USB ports back, plus gained some.

I agree on the Apple Card too. I’m generally against financing stuff, but with the Apple Card installment plans there’s no reason not to. No interest, no fee and 3% cash back. I have an iPhone 13 Pro Max 1TB on the Apple Installment plan and in the end it saved about $53 by financing. Plus you keep your money in your bank account longer and earn some interest.

.... but if you want the “older” 2018 mini with the M1 chip it will be available soon as it is used for commercial applications as well, at a higher price.
Rumors are that the new Mini will arrive late 2021 or early 2022 and will have the faster M1X chip. We may find out more on Oct 18.

Apple is developing a high-end version of the Mac mini that has a revamped design, according to Bloomberg. The updated Mac mini will feature a faster M1X chip, and it will replace the current Intel Mac mini.

Apple is expected to release this new version of the Mac mini "in the next several months," which is vague enough that it could mean either a late 2021 or early 2022 launch. Given that Apple plans to release a new MacBook Pro with an M1X chip this fall, we could also see the new Mac mini debut in the same time frame.

Bloomberg says the new Mac mini will include an improved version of the M1 chip with a 10-core CPU that has eight high-performance cores and two energy-efficient cores, plus 16-core or 32-core GPU options. The Apple silicon chip will support up to 64GB RAM.

The New Mac mini will be equipped with more ports, featuring four Thunderbolt ports rather than the two that are available on the current Mac mini.

Prosser says that the upcoming Mac mini will continue to feature four Thunderbolt ports, two USB-A ports, an Ethernet port, and an HDMI port, along with the same magnetic power port used for the 24-inch iMac.

^^^ Correct, the new "high end" Mac mini will have a selection of ports and be more capable to be used commercially like the 2018 models were.
The current new Mac mini has scaled down ports ect and intended for personal use, its great news because it comes in at a lower price point for a screaming fast machine.
More or less to protect its profit margins, Apple is offering the Mac mini now in two "flavors" where it used to be one machine in 2018 and before, now it is a lower priced (but super screaming fast) "home edition" and the other new Mac mini will be a super fast commercial machine.
This allows Apple to set a higher price for the commercial market and maintain, heck, possibly grow the home and small business end with its standard unit.
So what used to be one machine is now two, home and commercial (for those that need it) and allows different pricing. At least this is the way I understand it, didnt interest me much except to quick read a story on it maybe a month or so ago.

I buy refurbished computers. More bang for the buck and it isn't sitting in a cargo ship off California. Tons of shops out there that specialize in fixer uppers.

Yes; wait to see what comes out in the next few weeks before you purchase.

The new Mac mini M1 has been out and on sale forever now, maybe a year ago... Costco has sells it for as low as $599 and is all ANY homeowner needs. However if you want a more "commercial" Mac mini M1 that will be used in sound and video applications (of which you will never need or use) as well as home you can expect those before the end of this year and maybe before the end of Oct.

Being you were asking about a "sale" I could not imagine you were looking to spend a couple hundred more dollars for a more "commercial" Mac mini when the current $600 Mac mini M1 is already way more powerful then any homeowner needs.

There is no shortage of available Mac mini's M1's
