I used PP in my old RX 300 a couple of times, and I really didn`t think it was that great. However,I decided to try it in my 330 (to clean it out good) I noticed it seemed a little thinner? And I can definitely feel the motor is smoother, peppier on it now. Coincidence?

Like fine vintage wine, I find oils of the same brand with some variation. Like QS dino when they forgot to use PPD in their w rated oil and it had no cold flow .... When you come upon a fine vintage oil - buy a case or two and cellar it - to be enjoyed over the years.

Pennzoil Platinum did change their formula a bit. If you look at the PDS's from 2008 and April of 2009, there are differences in some numbers like pour point. I verified this by calling their customer service line. I still plan on using my stash of PP made after April 2009 once we finally see temperatures above freezing again.

You are comparing 2 different cars in two different situations.
And comparing them with highly subjective realization.
Why think it is an oil formulation change?

Because their basically the same engine. The 3.3l has better lubrication passages, and larger bore. But not much else is different.

Did it happen when they changed the label? I only recently noticed I have like 4 quarts of PP with a different label on the back than my other bottles...I think they're older.

That would seem about right.
