Cooking eggs - refrigerigerated vs room temp

In the US we mostly have eggs washed clean of the protective cuticle, where they need to be refrigerated. I understand in Europe, most eggs are not washed and typically sold at room temperature because there’s a risk of condensation leading to bacterial growth.

But I’m not sure how they’re prepared. I’ve tried leaving eggs out for a couple of hours (longest recommended without refrigeration) and found that cracked they tend to run and spread out. I’m wondering how temp should be accounted for.

That generally means you have old eggs
 
I typically do not wash eggs that are clean out of the coop. They last at least 20 days if kept away from lots of heat such as a stove or direct sunlight. Dirty eggs get washed and refrigerated. The unwashed eggs are clearly superior in how they look and taste IMO.
 
This is a great question! Recently I've been seeing a lot of "internet advice" that tells me NOT to keep my eggs in the fridge.
I still do, and they seem OK to me, but I'd like to hear the truth from someone at least once on this subject.
 
That generally means you have old eggs
Or very very new eggs, it takes some amount of time, a couple days maybe, to "gell up" a bit.
Still warm from the chicken ones, are good for scrambled though!
I don't find much difference in our eggs from washing and longer term fridge storage, but what they eat is very noticeable. Our are back to eating grass, plants, bugs, whatever now that winter is over and the eggs are back to orangey yolks and a bit more rich.

USDA graded eggs are supposed to be washed, so they lose their protective cuticle and have to be kept refrigerated except for a fairly short time.

If you can find unwashed eggs from a farmers market, those can be kept at room temp for a few weeks.
 
Once you wash them, refrigerate them. When it comes to suny side up those from fridge have more liquid/creamy yolks when cooked.
