Condiments - if you could only have one

I've always been a condiment guy, my wife even ribs me about it so she asked me last night if I could only have one what would it be.

Mine would have to be mustard, plain ol' yellow mustard.

So if you could only have one condiment what would it be?

Louisiana-style hot sauce. It's not the right condiment for everything, but pretty versatile.

No question it's hot sauce.... been growing/making my own for decades... but which recipe, I really couldn't settle on only one, long term. Okay I'll try... it'd be fire roasted peppers and garlic, hint of lime, ascorbic acid, salt, minimal water. Add other ingredients and not as universally compatible, and maybe the garlic limits that too.
 
Ketchup, not sure if salt qualifies as condiment since you need it to live and its a mineral.
