A dedicated range hood will be far superior. We have a 900cfm with an 8" exhaust duct and rarely have to turn it past the first speed (400cfm). The difference is it's nearly silent with such a large blower and duct, whereas our old range hoods were screaming loud just to keep up.
Keep in mind, with large exhaust fans you run the risk of pulling flue gasses back into the house. Open fireplaces, gas furnaces and water heaters need to checked to insure they are sealed and safe.
