I have Dodge 5.7 Hemi with oil catch can to condense oil vapor in the PVC before enters the intake. Over winter I accumulate significantly more volume oil. Using Mobil 1 5w-20. No issues with Blackstone labs. I also see condensation in catch can, but never in pan when I change. Any ideas why I accumulate more oil vapor in winter than summer months?

The engine is colder for longer. Bigger temperature difference between outside and the engine. So the engine is going to be putting more water and fuel vapor in the oil. Do you let the engine idle? That wont help any.

This is to be expected, and is normal.
Some is simply more water vapor from cold running conditions, and also
water vapor is condensing in the catch can and lines.
It passes through in summer unnoticed.

But water can freeze after a cold sit, and block the flow of the PCV system.
I remove the filter on my catch can, and use a reverse flow from normal because of this.
