Can you have excess grease in caliper pins? Maybe from the previous brake jobs that added up over time? Do you clean out the old grease before putting in the new?

What do you guys generally do?

Yes, I use brake clean and a bore brush to clean the "bores" before I relube them each time.

The bellows/seals should be good - no rips or leaks. You won't go long without water getting in and corroding things otherwise.
They are super easy to clean out. Clean and possible dress the pins, and grease the hole and the pin. Don't worry about excess grease inside. You don't need it outside at all.
