I have shot many a Marlin 336C 35 cal, 200g core lock Remington's at deer in Upstate NY . Going for a fun hunt in WV at 62 in November with no more clothes left and 35 Remington ammo insane as to price and availability . I just bought myself a Savage Axis II in 30-06. I see I have my choice of 150/165 and 180 grain weight. Any suggestions?

All else equal, I prefer the heavier bullets but 30-06 has enough grunt that it doesn't matter as much as it does with smaller calibers. That gives you the freedom to shoot whatever punches the tightest groups or puts the smallest dent in your wallet without worrying about ballistic efficiency.

The '06 is more than enough gun for white tail deer with any off the shelf ammo in any weight you mentioned. Can't get more dead than dead.
