An oversized filter will help with oil temp. It won't cool oil much, but it offers an extra pint or so in total circulation so that's added overall system capacity which means that it will take a wee bit longer for any oil portion to get recirculated through the bearings, and that is a good thing

The bearings will see constant flow, but with the increase, the whole system has more chance to shed heat

Sludge creation comes from a number of sources, but usually starts with byproducts of combustion mixing with the oil and then getting baked on. Water vapor is also a byproduct of combustion and inherent in the engine. So water vapors from all sources can accumulate in the crankcase and help make the sludge happen faster.

This is why we change oil. Not because it's worn out, but because it is contaminated. Some engines do this faster than others. I dearly loved my Audi 80 back in the day. And I got more police citations in that car than any other. But I did have to step up my maintenance game to keep it running fast enough to earn those tickets

I dunno if you'all have access to BG products (?), but for motors that like to make sludge, a 1/2 can of BG 109 with each oil change will keep it spotless as long as you keep up the maintenance. Not saying you must, but it is good stuff and somewhat more aggressive than the built-in detergents ... If no BG products out your way, look at what Liqui-Moly has in their catalog

Castrol recommends Castrol Magnatec 5W-40 C3 as suitable for use in engines requiring GM/Opel dexos2 lubricants and where GM LL-A-025 or GM LL-B-025 specified products were originally required.

This is a very impressive list of approvals. I would just keep using it. And it has a little better spread than M1 0W-40
 
IIRC these engines used an coolant fed oil heater/cooler on the oil filter mount, oil temps tend to be pretty stable with this little arrangement year round.
IMO don't mess with a good thing, the Castrol is very good and fits well to the engine and climate.
