Need to replace a couple LEFT Side Positive terminal batteries with Right Side Positive terminal batteries and was told to look into extender cables or a way to "go over the top" of the battery. Have almost zero room for physical dimension/size increase but can get a LifePO4 car battery that is a little taller but has the wrong "Right side +"

Getting the original OEM is out as system as configured needs a little more reserve capacity plus the LifePO4 has an automatic jump/25%/reserve built into the BMS.

Any experiences with either of these

I cant comment on your specific application, but I have used the KnuKonceptz part that you linked.

I have used these when adding AUX batts, other Audio system installs, and other 12V power projects for over landing or off-roading.
I try to stick with brass and copper when or where I can if the application allows. The best advice I can give you is USE die-electric grease as an encapsulation method and your connections will live much longer corrosion free, do NOT mix conductor types (meaning if one line is copper or OFC, do not add in something that is CCA), solder where you can using solder lugs (solder pills).

I have found a lot of different type of battery connectors and cutoffs over the years by searching through the Marine or boating genre, tons of applications in that world and all of them fear corrosion more than we do as they live in the water.
