I acquired a bottle of Bailey's Irish Cream, just about the only liquor I like, but I am in no hurry to drink it.

Is the date on the bottle it? Or is it like milk where it can go a week later, OR is it like canned goods where its pretty much good forever?

Also, should I refrigerate it or does it matter?

thanks

Dunno...and I don't know any Bailey's drinkers who have ever had it go off...hint hint.

Don't drink the stuff personally (I like it, but not enough to buy it).

Got a recipe floating around if you want it.

By all means... do tell!

Recipe given to me by a mate

Quote:
~OC's Homemade Irish Cream~

4 egg yolks
1 Tin Condensed Milk
300ml of Cream
3 tablespoons of Chocolate Ice Cream Topping Sauce
2 teaspoons of coconut essence
1 cup of rum or whiskey

Beat egg yolks till frothy

Mix all ingredients together

Test and adjust for taste, if too strong add a little more cream and chocolate sauce, if too weak add more alcohol.

Bottle and chill.

Keeps for around a month, but I find it dissappears a lot quicker.

Thanks, I'm in no hurry to drink it. Kind of saving it for after I purchase a house.

I used to just love White Russians, until I went to Holland and they didnt know how to make one (or have the milk/cream) so I got some Bailey's. Then tried a white russian again and remembered how much better the Bailey's was.
