Bacon grease

My wife does everything possible to extract as much of it as possible out of the bacon she cooks. (There's nothing more disgusting than soft, fatty, blubbery bacon). After that the only place it's going is in the garbage.

Years ago while backpacking, my readilly available snack was fish, either herring in sour cream or roll-mops (rolled around a pickel).
A pal ate raw bacon. He'd peel off a slice and eat it like ribbon candy.

Only 3 minutes in the microwave wrapped in a wet rag. Yeah, right. Imagine eating that pile of soaking wet, fatty slop. That's enough to gag a maggot.

My wife loves bacon but likes it crisp, with no grease dripping. I bought this and she has the type of bacon she likes in 5 minutes. While cooking in the microwave all the grease drips down between the slats so the bacon isn’t cooking in it. My MIL liked is so much I ordered one for her too.

My wife uses a certain brand of paper towel, and cooks it in between several sheets on a plate in the microwave. The paper toweling absorbs all the grease out of it, and the result is nice crisp, perfectly cooked bacon in about 6 minutes.

I've just started to cook the bacon in the oven when I cook ~1/4 pound of bacon on a wire rack with cookie tray under it. Keeps the grease contained for easy cleaning and even cooking but it takes like 30 minutes at 425° so not time efficient .

I mix it with my rendered tallow and use it to bard my lean roasts. And yes also with collards.

My wife does these bacon bombs. Dogs, cats, humans. Outside immediately.

A good-sized dollop always goes in the green beans - scratch made gravy for biscuits and gravy - a dab in esquites or refried beans - it's all good!

I cook bacon on a Phillips "smoke-less" indoor grill. All the grease falls into an easily removable tray, and then the grease goes into my grease collection bucket. I put parentheses around smoke-less because it really isn't totally smokeless. Use the grill under an exhaust hood.

We throw it away. When I was growing up my mom kept a jar of it around because she was from the south.

It's one of the best fats to use. I use it to fry or sauté things.

I use it to season my cast iron pans, and will use it this year to season my Blackstone. It did not fair well this winter and had major corrosion on the center of the cooktop even though it was stored indoors.
