I just had a random general question. On most/all cars I've had any time with [that actually had AC] I notice a sucking/gurgling sound after shutting the car off when the AC had been on recently. What exactly is this? Is it just the remainder of the compressed refrigerant squeezing out the expansion valve, or is it something else?

Your house refrigerator will do this too. Yes, it's the pressure on the high side of the system slowly bleeding through the pressure drop/expansion orifice. It's totally normal. If you didn't hear this, it would mean your compressor is bad or the system isn't charged up enough.
