My 2106 4runner has 140000 miles, I did the radiator drain and fill at 100000 miles using peak asian pink coolant back in 2022. I still have unopened gallon left which I found while cleaning my storage room. Should I just drain and fill again? Do coolant go bad by sitting around for 3 years?

Use it.
Sealed/unopened does not go bad. Follow Toyota's change interval and don't worry about it. If it's X number of years or X number of miles, just follow that.
Just did a drain and fill on my 2018 4Runner.
Used about 1/8 of a gallon of opened (but properly capped) Toyota pink that was at least 5 years old
and filled the remaining with a new jug of Aisin ACT-002.
I'm not going to worry about it.
