I'm looking for a 40 gal propane water heater that doesn't have to be plugged in to function. Either a digital gas valve with a battery supplying the ignition spark, or one with the old style non digital gas valve. Are there any brands that still supply these?

I assume you think the newer control valves require a battery or to be plugged in, they don't. This 48 second video does a good job explaining it.

The gas valve uses a milivolt power source provided by the thermocouple
Thanks guys, I didn't know the power was thermocouple supplied. Somewhere I saw and read about the need for a 120v connection. I'm relieved to know I was wrong.
120v is needed for direct vent heaters, the ones with exhaust blowers to vent sideways vs into a chimney or vertical vent.

Gas fired on demand would require line voltage
What you want is called standing pilot. Paloma used to make very solid tankless water heaters like that.
