Off the shelf 5w30's are perfectly fine.
You could also go all out and use HPL 5w30.
You could also consider stepping up to Mobil 1 0w40 potentially a bit more wear protection at that mileage.

I will look into the PCV system and inspect it.

Was 2012 the year GM addressed the timing chain issue? Maybe not as a complete fix but an improvement at least?

That being said, I will continue with the OCI's of 5K miles max on full syn.

Correct, but for the larger timing chain itself, I think that was 2012 and later.
