You need to bleed all lines. The fluid inside the caliper and brake hose will be most degraded and may even have some fine debris from rubber.

If your roads and plowed and salted, all-weather will be better-suited since you get better dry and wet grip. If they are untreated and you have snow and ice obviously winter will be better.
