Just heavenly... In the end, brisket took 16 hours plus rest time. On the smoker at 1130pm and eaten at 8pm the next day. Probably my best brisket yet, to be honest. This was so insanely good.

Our Tomato Pie yesterday with a San Marzano tomato sauce and a 3-day sourdough fermented crust. Topped with a bunch of fresh garlic and olive oil mix (sauteed prior) on top and some Pecorino Romano to finish it off. One of favorites to make.
