I would just get a basic, generic mattress and get a memory foam topper. That's what we've done and we love the topper. Costco has numerous below $200.

Absolutely. I bought a 3-year supply with oil on rebate, and then some from Costco, with the receipts taped to the jugs. If we don't have an oilmegaddon I can return the Kirkland oil to costco. If prices never rise, I'll still make out from rebates.
